FRESH MUSHROOM SOUP

12oz Mountainview Mushrooms, sliced
4 T. butter or margarine
˝ cup onions, chopped
˝ t. garlic, minced
2 T. flour
1 cup milk
1 cup light cream
1 cup chicken broth
1 t. salt
1/8 each nutmeg and pepper
Parsley, chopped (optional)
Rinse Mushrooms, pat dry and set aside approximately 4 cups. In medium saucepan, melt butter and add onion and garlic. Sauté until tender, about 3 minutes. Add Mushrooms and sauté 5 more minutes or until Mushrooms are golden. Sprinkle flour over mixture; cook and stir until smooth paste is formed, about 1 minute. Combine cream, broth and seasonings. Add to mixture slowly, stirring about 5 minutes until thickened. Garnish with chopped parsley.
