MUSHROOM FRITTERS

1/3 cup flour
½ teaspoon salt
¼ teaspoon baking soda
¼ teaspoon savory crumbled (optional)
1 egg
1/3 cup cold water oil for deep frying
24 small whole Mountainview Mushrooms


Mix flour with salt, soda and savory. Beat egg with water. Add dry mixture and beat smooth. Heat 2 inches oil in a 2-quart saucepan or deep fat fryer to 375 degrees Fahrenheit. Dip Mushrooms into batter then drop into hot oil. Fry about 1 minute until golden brown. Drain on paper. Serve warm makes 2 dozen.

Can be served plain or with a dipping sauce as catsup/mustard or soy thinned with water or white wine.
