MARVELOUS MARINATED MUSHROOMS

1 pound button or petite Mushrooms
½ cup vegetable oil
½ cup white wine vinegar
¼ cup lemon juice
1 tsp. seasoning salt
½ tsp. sugar
½ tsp. each dried oregano, thyme and tarragon leaves
¼ tsp. pepper
¼ cup each thinly sliced yellow and red bell pepper, celery and carrot
2 thin slices red onion


Wipe Mushrooms with damp cloth and trim stem ends. Drop Mushrooms in boiling water and cook for 2 minutes, drain, place in cold water to stop cooking, drain well on paper towel. In deep bowl, stir together oil, vinegar, and lemon juice, salt, sugar, herbs and pepper. Add Mushrooms and vegetables, then mix well. Cover and chill for at least 24 hours.
