MUSHROOM RELISH

½ cup water
3 tablespoons apple cider vinegar
1½ teaspoons sugar
1 teaspoon salt
1 teaspoon prepared horseradish
½ bay leaf
½ clove garlic, minced
½ pound Mountainview Fresh Mushrooms, cleaned and sliced
½ cup thinly-sliced red onion rings, separated
Snipped parsley
Lettuce leaves
In small saucepan combine first 7 ingredients. Simmer, uncovered 5 minutes. Stir occasionally. Place Mushrooms and onions in shallow glass dish. Add liquid. Cover tightly. Refrigerate 2 hours. Stir 2-3 times. Drain and serve in lettuce-lined bowl. Garnish with snipped parsley.
Makes about 2 cups.
