BLT SALAD

4 firm large tomatoes
Lettuce leaves
1 pound Fresh Mushrooms, cleaned and sliced
8 strips crisp fried bacon, crumbled
4 green onions with tops, thinly sliced
3 tablespoons vegetable oil
1 tablespoons red wine vinegar
1-½ teaspoons salt
1/8 teaspoon black pepper


Cut 18 center slices from tomatoes. Lightly salt. Arrange lettuce in 6 salad bowls.
Coarsely chop tomato ends. Toss with Mushrooms, bacon, onion, oil, vinegar, salt and pepper, spoon over tomato slices.

Makes 6 salads.
