MUSHROOM ONION TART

2 large onions sliced
3 tablespoons butter
9-inch unbaked pastry shell
2 cups sliced Mushrooms
4 eggs
2/3 cup milk
˝ teaspoon salt
˝ teaspoon fine herbs
1/8 teaspoon pepper


In a large skillet sauté onion in 2 tablespoons butter until just tender, place onion in bottom of pastry shell. Add remaining butter to skillet, sauté mushrooms lightly, arrange on top of onion. Beat eggs in milk, salt, herbs, and pepper. Pour over Mushrooms. Bake in a 400-degree oven for 30 minutes until set.

Makes 6 servings.
