MUSHROOM BEEF SAUTE

8 to 10 oz boneless strip steak (about 1-1/4 inch thick) cut in 1-1/2 inch chunks
8 oz whole medium-sized fresh white Mushrooms
1 ½ c zucchini and/or yellow summer squash cut in 1-inch chunks
Olive Oil
1/3 c smooth peanut butter
2 TB soy sauce
1 TB rice wine vinegar
½ tsp ground cumin
1/8 to ¼ tsp ground red pepper


Preheat broiler. On 4 (12-inch) skewers alternately thread steak, Mushrooms and squash. Place skewers on a rack of a broiler pan; lightly brush with oil. Season with salt and black pepper, if desired. Broil 4 to 5 inches from heat until meat is medium-rare, about 10 minutes, turning and brushing occasionally with oil. Meanwhile, in a small bowl combine peanut butter, ¼ cup water, the soy sauce, vinegar, cumin and red pepper; serve with skewers. Garnish skewers with cherry tomatoes, if desired.
