• 16 oz. Mountain View Mushrooms (white or crimini)
  • sliced 4 T. butter or margarine
  • ½ cup onions, chopped
  • ½ t. garlic, minced
  • 2 T. flour
  • 1 cup milk
  • 1 cup light cream
  • 1 cup chicken broth
  • 1 t. salt
  • 1/8 each nutmeg and pepper
  • Parsley, chopped (optional)

Rinse mushrooms, pat dry, set aside approximately 4 cups. In a medium saucepan, melt butter and add onion and garlic. Sauté until tender, about 3 minutes. Add mushrooms and sauté 5 more minutes or until golden brown. Sprinkle flour over mixture; cook and stir until smooth paste is formed, 1 minute. Combine cream, broth & seasoning. Add to mixture slowly; stir about 5 minutes until thickened. Garnish with chopped parsley.
